ham & cheese waffles

BREAKFAST FOR DINNER may be the most exciting phrase for weeknights. I don't think I've ever met a person that disliked waffles...or breakfast for dinner for that matter...but waffles are a staple in every breakfast menu. Soft fluffy pillowy goodness easily transformed from sweet to savory, to whatever you put near them really. Since it was a rainy weeknight and I was feeling especially lazy, breakfast for dinner sounded perfect. Add in some ham and cheddar and you've got yourself an easy peasy breakfast waffle!


Side note: if I can make these mopples with this ancient beauty...


...then you have no excuse!! (And do not worry...this is on my list)

Ingredients (for 8 waffles):
1 1/2 cups milk (buttermilk ideally)
4 tbs white vinegar
2 cups flour
4 tbs white sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt
4 tbs butter, melted
2 eggs
cooking spray
1/4 lb of sliced deli ham, shredded
2 slices of cheese of choice, shredded

Directions:
1.  Combine milk with vinegar in a large bowl and set aside for 5 minutes.


2. Combine flour, sugar, baking powder, baking soda, and salt in a medium bowl. 

3. Whisk melted butter and egg. Add to milk in large bowl.


4.  Pour the flour mixture into the large bowl of wet ingredients and whisk until lumps have just disappeared.


5. Heat waffle pan and coat with cooking spray. Once toasty hot, pour batter onto pan. Top with shredded ham and cheese. Close pan and cook away!


 6. Enjoy with butter and syrup!

 
 
 

Also: if you find that you've made too many to eat (ridiculous!), these freeze well and reheat well in the toaster.
