tis the season for artichokes

The short artichoke season is upon us! Better take advantage of it before it leaves us too soon...

2 artichokes
2 cloves of garlic
1 lime
Dash of salt
Dash of pepper
Drizzles-worth of olive oil

*Preheat oven to 425

Begin with 2 artichokes (for sharing, of course!). Cut 1/2 inch off of the top and the bottom of each artichoke so they are able to stand on their own.

Smush garlic clove to soften and remove outer layer. Push 1 garlic clove into each exposed artichoke. Cut lime in half and rub outside and on top of each artichoke. Squeeze a little lime juice in the middle. Drizzle with olive oil, a pinch of salt, and a pinch of pepper. Squeeze remaining lime juice over tops of the artichokes.

Place each artichoke on tin foil and wrap tightly around to ensure minimal leakage and maximum cooking power! Bake at 425 for 1 hour and 20 minutes (less depending on size of artichokes).

Remove from oven and let stand for 15 minutes. Unravel and daintily eat your way through this healthy delicious app!
