shrimp scampi

My college roommate helped show me how easy shrimp scampi can be to make...and I have been forever grateful for the 2 minute tutorial! Shrimp is one of my favorite proteins; being low-fat & high-protein, it easily adopts its neighboring flavors. Make & garnish this dish to provide a real crowd-pleaser for your next dinner (or quick weeknight dinner)!


Ingredients (for 2 large portions):
3/4 lb spaghetti
12 deveined shrimp
4 tablespoons butter
4 cloves of garlic
1 tablespoon lemon juice
1 tablespoon chopped parsley (fresh or dried)
1 teaspoon cayenne pepper



Directions
1. Bring a pot of salt water to a boil. Add pasta.


2. Melt butter in pan over medium heat. Add chopped garlic. Stir until fragrant (a couple of minutes). Add pinch of salt & pepper.


3. Arrange shrimp in order for each shrimp to have their own area.




 4. Let sit for about 1 minute while you stir & check on the pasta. Add lemon juice, chopped parsley, and cayenne pepper.


5. Strain pasta when al dente, but reserve 1/4 cup of the starch water from the pot. Flip shrimp.


6. Let sit for another minute. Add water from spaghetti pot. Add pasta to pan and push around to coat in scampi sauce.


7. Plate, garnish with fresh parsley, and serve!

simple weekend recap: edition 3

This past weekend was one of the warmest this year. Moose and Erin were not fans of this heat, and neither was I! The heat was oppressive and forced me to be a homebody tucked in with the shades down and all of the fans on while watching some movies I had lined up.


The weekend started off on the right foot...with bacon! My favorite way to make bacon is to bake it on a cooling rack at 400 degrees for 20 minutes. Nice and crispy and not swamped in grease.
 
 

Made some brunch hash with potato, onion, eggs, cheese, and fresh chives. Super easy & quick recipe tomorrow!
 

Sunday dinner was one of my favorite & simplest recipes of all times, shrimp scampi! Recipe later this week!


Now that the heat has momentarily broken...it's time to be social! Later this week I will be heading out for a Whim pop-up series dinner at Smolak Farms in North Andover. Social....and foodie...my favorite combination!
