brunch souffle

For an easy peasy brunch meal, you can whip up a brunch souffle in as little as 40 minutes...with absolutely no effort whatsoever. Wake up, put the ingredients together, pop in the oven and wander about making coffee, entertaining, squeezing juice, watching tv, whatever you want really, until your golden goodness is ready to be enjoyed!


Ingredients (for 4 servings):
1 hunk of bread (I used about 1/3 of a loaf)
5 eggs
2/3 cup nonfat milk
1/3 cup shredded cheese of choice
salt & pepper
other add-ins of choice: mushrooms, peppers, broccoli, spinach bacon, potatoes

Directions:
1. Preheat the oven to 350F. Lightly grease a pie pan. Loosely rip up bread (I used pepperjack to add a bit more of a kick) to cover the bottom. 
  
 

2. Whisk eggs, milk, salt & pepper.
 

3. Pour egg mixture (along with any add-ins) over bread, sprinkle with cheese.
 

4. Pop in preheated oven for 35 minutes, until puffed up and crisped brown on top.
 
 
 

Easy enough to whip up on a super lazy weekend morning for yourself or for everyone to share!

christmas recap

This Christmas was packed with food...so much food, so little time to fit it all in. All week we have had a crackling fire glowing away in the background of all of our activities.


We opened an early gift of rum my parents picked up from Barbados (as they don't export this type & it was engraved as a gift)...


 

 ...before making some festive Christmas tree cookies...lots and lots of cookies...


 

...followed by a taste testing of champagne.
 
 
 
 

We settled in for a movie before Christmas eve dinner of steak au poivre and lots of Alaskan King crab legs (my favorite food in the wholeeee world).
 
 
 
 

Christmas morning we skipped down the stairs to our full tree, and opened our presents while the paparazzi followed Erin.
 
 
 

Christmas dinner fell in my hands as everyone watched sports on TV (no thanks). I made a Christmas turkey stuffed with butter and herbs to retain the moisture, ham, green beans with toasted pine nuts and shallots, cornbread stuffing & scalloped potatoes served with the necessary crescent rolls, olives, cranberry sauce & meim's gravy.
 
 
 
 
 
 
 
 
 
 

After a huge Christmas dinner we took a break, watching a Christmas movie by the fire before....chocolate soufflés for dessert of course! I added a touch of salt and a pinch of cream of tartar to the recipe for some extra depth & topped them with Toscanini's french vanilla ice cream.
 
 
 
 
 
 

The day after I'm still recovering from all of the food...but definitely looking forward to some leftover "Thanksgiving" sandwiches for dinner!!

4-ingredient chocolate soufflés

My family & I went to an Italian restaurant on a yearly-basis just for the chocolate soufflé they offered for dessert. Hot molten-chocolate inside with a crisp tougher shell...absolute chocoheaven. When we heard they were closing, we were heartbroken...until we asked for their chocolate soufflé recipe...AND GOT IT! We were shocked when we learned the recipe only had 4 ingredients...and packed such a tasty punch at the same time. This is the easiest, most fool-proof entertaining-dessert possible. Just mix the ingredients, pop into the oven, and 20 minutes later, you have an unbelievable chocolatey dessert!!


Ingredients (for 8):
6 eggs
1 cup sugar
2 cups chocolate chips
2 sticks butter

Directions:
1. Preheat oven to 350 degrees. Set out ramekins.


2. Whisk eggs with sugar & Set aside.


3. Over medium-low heat combine chocolate chips with butter. Melt together.



4. Combine the egg-sugar mixture to the chocolate-butter mixture and turn heat off. 


5. Fill each ramekin 1/2-way with mixture. 


6. Pop in preheated oven for 20 minutes. Soufflés are finished when they do not jiggle and when a cake-tester comes out clean.



*Best served with a heaping scoop of vanilla bean or french vanilla ice cream on top*
