chipotle-garlic pasta

Here is the quick & easy recipe for the chipotle-garlic pasta! Perfect for a quick meal that provides a filling & spicy depth of flavors.


Ingredients:
1/2 lb pasta
3 tablespoons vegetable oil
3 cloves garlic  
3 dried chipotle peppers
Parmesan for topping

Directions:
1. Bring a pot of water to a boil. Add pasta. Lightly crush garlic cloves. Add to pan with 3 tablespoons vegetable oil.
   

2. Brown garlic on all sides until almost black (8 minutes).
 

3. Break dried chipotle peppers in half, scrape out seeds, and add pods and seeds to blackening garlic in the pan.
 

4. After about 2 minutes, remove pods and garlic cloves, leaving seeds in the pan. Strain and add pasta to the pan along with 2 tablespoons of the reserved pasta water. Toss to coat.
 

5. Plate & top with parmesan cheese. Serve & enjoy!

simple weekend recap: edition 4

It appears as though this past weekend was filled with a bunch of seafood. Salmon, lobster, and swordfish! The salmon in a saffron curry sauce is one of my favorite dinners to make. Don't worry, I'll share the recipe later this week!


The weather this weekend was perfect, and Erin was able to take full advantage of the sun during a nice long hike through the park.
 
 
 

After some tasty deviled eggs, lobster was definitely due (the first of the season for us...we're so behind the times)!! To wrap up the seafood weekend, we had some of the sweetest corn from the farm down the street.
 
 
 
 

After a long weekend of seafood, some garlic chipotle pasta was much needed (quick&simple recipe later this week, too!)


My weekend was filled with good food & the great outdoors...pretty ideal for me!
