nutella cookies

If you're looking for something healthy...look away. If you're looking for something wrong in all of the right ways, welcome. I have a somewhat unhealthy obsession with nutella, but let's be real, who doesn't? I've been found a few times hiding under blankets with spoonfuls of the chocohazelnutcrack, eyes wildly-large mouth coated in chocolate gold. I decided it was time to make my nutella-love into something more acceptable to eat in public...cookies!


Ingredients (for 18 cookies):
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter (cubed)
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 tbs nutella 

Directions:
1. Preheat oven to 325F. Sift together the flour, baking soda, and salt. Set aside.
2. Cream together the butter, brown sugar, and white sugar until softened and well mixed.
 

3. Beat in the vanilla, egg, and egg yolk until light and creamy.

 

4. Add the 2 tbs of cr...*ahem* nutella and mix quickly to not overblend and keep the streaks.
 
 

5. Make small cookie doughballs, flatten slightly, and pop these badboys into the preheated oven for 16 minutes. Let cool for as long as possible before enjoying with a cold glass o' milk!

"ugly but good" cookies

Brutti ma Buoni are well-described by their translation of "ugly but good". Typically made with hazelnuts, I only had almonds on hand, and they did just the trick! Crispy on the outside with a chewy moist texture on the inside, these cookies are the easiest 4-ingredient cookies, period.


Ingredients:
1 1/2 cups almonds
1 1/2 cups confectioners' sugar
1/8 tsp salt
1 egg white
2 tsp vanilla extract

Directions:
1. Preheat the oven to 400F. Spread almonds in a single layer on a baking sheet. Toast almonds in oven for 10 minutes, until fragrant. Transfer almonds to a food processor. Add confectioners' sugar and pulse until finely chopped. 
  

2. Transfer mixture to bowl. In a small bowl beat egg white with vanilla extract. Add egg mixture to nut mixture and stir until fully blended and crumbly.
 
 

3. Line baking sheet with parchment paper. Make small mounds of dough and put back in oven for 13 minutes.
 

4. Let cool on wire rack to crisp up before enjoying.

chocolate chip cookies with banana

Last night I made chocolate chip cookies with slices of banana in them. This was a special request for a birthday...and I had never tried to make these before, but by goodness I will make these all the time now! T was the taste-tester and tested 5 before admitting that these were THE BEST COOKIES he had EVER HAD in his WHOLE LIFE! I heard this report many more times today...so enjoyyyyyy!


Ingredients (makes 18 medium/large cookies)
 2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter (cubed)
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips
2 bananas

Directions:
1. Preheat oven to 325 degrees F (165 degrees C). Lightly butter/grease baking sheets. Sift together the flour, baking soda and salt.




2. In a medium bowl (or a mixer), cream together the cubed butter, brown sugar and white sugar until well blended.




3. Beat in the vanilla, egg, and egg yolk until light and creamy.


4. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand. 


5. Drop 1/2 tbsp cookie dough onto prepared cookie sheet. Place banana slice on each dollop.


6. Cover banana slice with another 1/2 tbsp cookie dough and make sure all of banana slice is enveloped in the dough.



7. Bake for 14-16 minutes (check often to make sure they are perfect) until the top is crispy and the edges are almost browning. 



8. Cool on wire rack and enjoy [with a nice glass of milk]!
