birds nest cookies

Birds nest cookies hardly have a recipe. If you use a microwave, they will be done within 12 minutes. If you don't, they'll be done within 15 minutes (all include a 10 minute waiting time). With the holiday season coming up these are a surprisingly simple recipe that you can whip up for a holiday party...even if you don't cook at all!
Ingredients (for 1 dozen cookies):
1 6-oz bag of chow mein noodles
1 10-oz bag of butterscotch morsels
1/3 cup semi sweet chocolate chips

Directions:
1. Place chow mein noodles in a bowl.
 

2. Either on the stovetop or in a microwave, melt the butterscotch and the chocolate.


3. Pour the butterscotch and chocolate mixture over the noodles and stir to coat completely. 


4. Cover a baking sheet with parchment paper and make little nests of a tablespoons-worth of cookie mixture. 
 
 

5. Put cookies in refrigerator for 10 minutes, or until hardened.

simple weekend recap: edition 16

A chilly weekend was mostly spent snuggling indoors in an
 over-sized sweater making holiday cookies...


 

...going to TW Food (review this week)...

 

...making chocolate-coated buttered popcorn (recipe this week)...
 

...and potato-horseradish crusted tilapia with bacon-roasted 
brussel sprouts and rice pilaf (recipe again this week)...

 

...before relaxing with a movie and scallion-ginger 
soup to ward off a possible incoming cold!

chocolate peanut butter cup cookies

Perfect for holiday parties, and peanut butter cravings, chocolate peanut butter cup cookies pack a tasty punch with minimal effort. You can either make them in a mini-muffin tin to make them muffin-cookies, or make them into crispy gooey cookies (my favorite way!). These can be enjoyed with a small glass of milk or crumbled over ice cream.


Ingredients (makes 36 mini muffins or 24 cookies):
1 3/4 cups flour
1/2 tsp salt
1 tsp baking soda
1/2 cup softened butter
1/2 cup white sugar
1/2 cup peanut butter
1/2 cup packed brown sugar
1 egg
1 tsp vanilla extract
2 tbs milk
36 or 24 mini peanut butter cups

Directions:
1. Preheat oven to 375degrees. Mix together flour, salt, and baking soda in a small bowl. Set aside.


2. Cream together the butter, sugar, peanut butter, and brown sugar. Beat in egg, vanilla, and milk.
 

3. Add the flour mixture and mix.
 


4. Muffin-cookies: Shape in into small balls and place each in muffin tin. Push peanut butter cup into dough. 

Cookies: Make small balls and place on parchment paper on a baking sheet. Push peanut butter cup into dough. Top with another small dough ball like in the recipe for chocolate chip cookies with banana

 

5. Bake in preheated oven for 10 minutes, or until melty and toasty.
